How can I shoot in black and white from my P300 (Nikon) Camera?

Continuous shooting I'm new to this so bare with me. I just got my Nikon D60 and I want to shoot pictures in continuous mode. I set it on manual, go into the menu and change it to continuous. I rotate the dial so it changes the shutter speed but when I take pictures it's just a black screen. As a matter of fact any time I try to take a picture in M it's just black. I have a Fuji S1000FP and for the most part it takes great photos EXCEPT when I take pictures into the sun then my photos are either white or black and no image. I will admit I just want a point and shoot camera because I don't understand shutter speed and such. However, I have attempted to change the shutter speeds and still nothing.
